The recent Cyclospora parasite outbreak has cast a spotlight on lettuce and other salad greens, raising concerns about the safety of fresh produce.

While investigators have not pinpointed a specific product or supplier as the source of the outbreak, interviews with sick patients have repeatedly suggested a link to lettuce and other salad greens, with many of those patients having eaten at Taco Bell before becoming ill.

State and federal health officials, including those from the CDC and FDA, are investigating a possible connection between fresh ingredients served at certain Taco Bell locations and the Cyclospora outbreak.

Taco Bell has voluntarily removed select fresh ingredients at certain locations as a precautionary measure, while public health officials continue their investigation.

Cyclospora is a microscopic parasite that infects the small intestine after people consume contaminated food or water, according to the CDC.

The majority of domestic Cyclospora cases have been linked to fresh produce, including leafy greens, cilantro, and berries, with over 1,645 cases reported since May 1.

The CDC is also investigating over 5,100 suspected cases, with a total of 145 people having been hospitalized with the infection.

Cyclosporiasis is not generally a life-threatening illness for most people, but it can cause severe, prolonged diarrhea that may last for weeks or even longer if left untreated.

Health officials warn that people with compromised immune systems are at a higher risk of developing severe symptoms.

Experts recommend washing lettuce and all salad greens thoroughly and washing hands with soap and water before and after preparing food to minimize the risk of infection.

Registered dietitian nutritionist Caroline Margolis suggests choosing whole heads of lettuce and discarding the outer two to three leaves before washing and rinsing them thoroughly.

Other experts recommend skipping prewashed, bagged lettuce and salad mixes and opting for frozen or canned produce as a safer option.

Health officials emphasize the importance of following CDC recommendations for safe food and vegetable handling and preparation to reduce the risk of illness.

Some recommended precautions include washing your hands thoroughly when handling and preparing fresh produce and following proper food storage and handling procedures.

For those who wish to take further precautions, opting for frozen and canned produce may be a safer option, according to experts.
